King Ranch Casserole

A Texas staple. This is my
mom's version of this popular Texas dish. It's always a hit and
it's about the only real meal that I can
make that my husband actually likes.

Did they actually make this at the
King Ranch? Hmmm...



1 cooked chicken, deboned
1 package corn tortillas
1 onion, diced
grated cheese

Layer the above in a pan
(2 layers)

Pour over all:

1 can cream of chicken soup
1 can cream of mushroom soup
1/2 can Rotel Green Chili Tomotoes
1/2 can broth from cooked chicken

Mix above and pour over chicken.
Bake at 325 degrees for 45 minutes.

Serves 10 (yeah, right)
