Texas Hash

This is one of those recipes that you can make
when you need a quick, good meal on the spur of
the moment. The beauty of this recipe is that you
probably have most of the ingredients already.
Give it try. It will probably become one of your
regulars.

Ingredients:

3 T. shortening or oil
1 large onion, chopped
1 large green pepper, chopped
1 lb. hamburger meat
2 c. canned tomatoes
1 tsp. chili powder
3 c. cooked rice
salt and pepper to taste
bread crumbs for topping (optional)

Directions:

1.Saute onion and green pepper in shortening (or
oil) until tender.
2. Add meat and brown.
3. Add tomatoes and seasonings.
4. Fold into cooked rice and mix well.
5.Arrange in greased casserole and top with
bread crumbs.
2.Bake at 350 degrees until hot.

Serves 6-8

Note: I usually don't bake this dish or add the
bread crumbs. I just make it in a skillet and I'm
done!
